Flank Steak

Tubby Jacks Flank Steak

2 x 400g Flank Skirt Steaks
Set your Tubby Jacks for high sear direct heat
For the marinade
200ml extra virgin olive oil
100ml white wine vinegar
Fresh chopped parsley
Pinch of coarse sea salt
1 tsp cayenne pepper
1 tsp paprika
  1. Seal the steaks in 2 sandwich bags massage in the marinade…it’s all in the rub store in the fridge for 2 nights
  2. Remove from the fridge and take out of the sandwich bags allowing the steaks to get up to room temperature before cooking.
  3. Place the steaks onto your Tubby Jacks and cook for 8-10mins on each side or until medium rare (the meat should have an internal temp of 150 deg f or 66 deg c)
  4. Transfer to a wooden chopping board and rest for 5 mins slice against the grain into thin strips at an angle
